Delicious Black Bean Recipe

 

Black Bean Recipe

I make a lot to feed whole family for days!

2 cups of dried black beans (2  15 oz ones cans)

1 small onion, diced

3-4 cloves of garlic—crushed (you can use whole bulb)

1/2 bunch of chopped cilantro (may use more, depending on taste)

(if I have sofrito (<– click here for recipe) I add 2 tablespoons instead of fresh cilantro)

1 tsp cumin

1 tsp oregano and/or bay leaf

2 tablespoons tomato paste or 1 cup tomato sauce

4 cups vegetable broth + water (or just 10 cups of water)

1/3 cup (at least) Extra Virgin Olive oil

Secret ingredient: juice of one lemon

Salt to taste (I use 2 tsp of sea salt) (I also sometimes add a dash of chili powder and/or black pepper)

 

 

  • Soak beans overnight
  • Boil beans in 2 quarts of water until soft (drain and change water before boiling)
  • In a separate pan, sauté onions in olive oil on medium heat
  • Once onions start to clarify add garlic and watch so it doesn’t burn
  • Add onion mixture to cooked beans and stir
  • Add tomato paste and mix
  • Add 1-3 cups of stock (the liquid should sit at least 1/2 inch above the beans in pot, but depends on how much caldo you want)
  • Turn heat to high and bring beans to a boil
  • Meanwhile, add cilantro or sofrito, 1-2 bay leaves, cumin and oregano (and dash of hot pepper if you like a kick)
  • Once beans boil turn down heat and simmer covered for 1/2 hour then take top off
  • Cook until beans thicken (at least an hour) (or you can transfer to crock pot on low overnight)
  • Stir occasionally to be sure beans don’t burn or stick
  • Once mixture thickens (the tomato paste helps it do this) at very end you can squeeze juice of 1/2 to 1 whole lemon– it makes the strong garlic taste “smoother”)
  • Be sure to add salt at end because you’ll cook the salt taste out when boiling and have to add more at end (watching our sodium!)

These beans are great over rice– brown basmati is delicious!

 

Use for burrito, quesadilla or fajita filling. Or you can blend or mash and use as a dip with tortilla chips!
